The only V8 that came with a T-98 in these trucks is the AMC 327, which is completely incompatible with the 360. You'd need both the 327 and its T-98, which is different from the 232 T-98. We in the USA have a hard time finding parts for the 327, which would seem to rule out that option in Australia. You'd be better off to find a complete Jeep/Buick 350 or Jeep/AMC 360 and T-18 and transfer case and then swap in everything. These parts are not compatible with the T-98, whether paired with a 232 or 327.
Not a lot of alternatives - the T-98 is considered obsolete (replaced by the T-18), and has very little support even in the USA. The main problem you will have with a V8 is the odd way that Jeep adapted these trucks to V8 power. Jeep used a special transmission with a very long input shaft and bellhousing to move the V8 forward and clear the firewall. The engine compartment is shaped to fit an inline engine. Nothing but your 232 or smaller AMC early 6s will fit the existing bellhousing and transmission. Conceivably one could adapt a different Ford or Chevrolet or AMC inline 6 engine using the existing Novak or Advanced adapter, but only the Chevy six would bolt up without some modification.
If you use the existing transmission and a V8 engine, you must move the transmission forward and the shifter will be under the dash. You could heat the shifter stalk and bend it to clear the dash. This also requires changing eh length of the driveshafts and other changes. And you'll still need the Advance or Novak adapter kit, which is meant for a GM V8, not an AMC 360.
These Kaiser era trucks were assembled from commodity components that were spec'd to fit the existing platform. Not much unity in the drivetrain before AMC took over.
